GO GREEN! Eat More Plants!

Ava Sanchez

I was born and raised in San Antonio. I will be graduating in Spring 2026 and receive a Bachelor of Science in Biology. After graduation, I will a career as a Medical Assistant that will put me on track to obtain a Master's in Physician Assistant (PA) Studies. During my time at St. Mary's University, I participated in a three year research program at UT Health known as STUROP. I am also part of Alpha Sigma Tau and served as its President, Vice President of Finance, and Membership Support and Accountability Team chair. I also spend time knitting beanies for new borns and I donate them to our University Hospital and I have dedicated two years of my undergraduate years as a peer tutor.

I must say, I have been neglecting my vegetable intake for a while now, but after reading your article I will definitely make sure to GO GREEN!     Hello, I really love your piece, I’m a vegan so my food is plant based. I especially like how you note the health benefits regarding areas such as heart diseases. Although my article is mainly focused on international relations, Vietnam is a hotbed for plant based diets and veganism. Which connects to its historical, cultural, and religious diversity. Especially that last one which includes Buddhism and Hinduism which have vegetarian communities.

    Your title was so engaging that I felt that I wanted to know about content before reading. Your infographic was very clear, and I could deeply understand what a plant-based diet is. I found it valuable that you explained both benefits and risks of plant-based diet. My article focused on development in India, and I think it is important to focus on not only benefits but also risks of policies aiming at development.
